Meditteranean Chicken Meatballs

Mediterranean Chicken Meatballs over Kale Caesar with Dried Cranberries, Cucumbers, Hummus, and Parm.

Garlic Feta Chicken Meatballs (Gluten-Free)

Cook Time: 20 minutes

Total Time: 35 minutes

Ingredients:

    •    1 lb ground chicken

    •    2 cups gluten-free seasoned breadcrumbs

    •    ⅓ cup reduced-fat feta (like Athenos Reduced Fat Feta Cheese

    •    2 tbsp minced garlic

    •    1 tbsp garlic mustard aioli

    •    1½ cups chopped baby spinach

    •   2 tsp of lemon zest paste

    •    Salt + pepper to taste

Instructions:

    1.    Preheat oven to 400°F and line a baking sheet with parchment paper.

    2.    In a large bowl, combine chicken, breadcrumbs, feta, garlic, aioli, spinach, and lemon zest.

    3.    Mix until just combined (don’t overmix).

    4.    Roll into evenly sized meatballs and place on the baking sheet.

    5.    Bake for 18–20 minutes, or until cooked through and lightly golden

Paired well with a kale Caesar salad, chickpea salad, or pasta tossed with lemon and oilve oil.
