“Cinnamon Toast Crunch” Banana Bread
Soft, cozy banana bread with a cinnamon sugar swirl baked into every bite, like Cinnamon Toast Crunch, but homemade and warm from the oven.

Yield: 1 loaf (8–10 slices)
Ingredients
Wet:
2 ripe bananas, mashed
1/3 cup butter, melted
1/3 cup maple syrup
1 tsp vanilla bean paste
2 eggs
Dry:
1 ½ cups gluten-free flour (or regular flour)
1/4 cup brown sugar
1 tsp baking powder
Cinnamon Sugar Swirl:
1 tbsp coconut sugar
1 tbsp cinnamon
Instructions:
Preheat oven to 350°F and grease a loaf pan.
In a large bowl, mash bananas. Add melted butter, maple syrup, vanilla, and eggs. Mix until smooth.
Add dry ingredients and gently mix until just combined (don’t overmix).
Pour half the batter into the loaf pan and sprinkle half of the cinnamon sugar mixture on top.
Add remaining batter and finish with the rest of the cinnamon sugar swirl.
Bake for 40–45 minutes, or until a toothpick comes out mostly clean.
Let cool before slicing and enjoy warm with butter.
Notes:
This tastes best slightly warm so the cinnamon swirl melts into the banana bread, it gives that perfect cozy, bakery-style bite.
