Hailey Bieber-Inspired Cottage Cheese Cinnamon Rolls (Gluten-Free)

Ingredients

Dough:

• 1 1/4 cups cottage cheese (blend until smooth, like from Good Culture)
• 1 tsp vanilla extract
• 2 tbsp maple syrup
• 1 3/4 cups gluten-free 1:1 flour
• 2 1/2 tsp baking powder
• ~1 tbsp milk (only if needed for moisture)

Filling:

• 3 tbsp softened butter
• 1/3 cup brown sugar
• 1–2 tsp cinnamon

For Baking

• 1/2 cup heavy cream (poured around rolls)
• Optional: extra butter + brown sugar + cinnamon on top

Instructions

1. Prep dough

  1. Blend cottage cheese until completely smooth with a food processor.

  2. In a bowl, mix blended cottage cheese, vanilla, and maple syrup. Save 2 tbsp of this mixture for the “icing”.

  3. Add gluten-free flour and baking powder.

  4. Mix until a soft dough forms (add a little milk if too dry).

2. Roll + fill

  1. Roll dough out on a floured surface into a rectangle.

  2. Spread softened butter evenly over the dough.

  3. Sprinkle brown sugar and cinnamon across the surface.

3. Shape rolls

  1. Roll dough tightly into a log.

  2. Slice into 6–8 rolls and place into a greased baking dish.

4. Add cream

  1. Pour heavy cream around the rolls (this keeps them super soft and gooey).

  2. Optional: sprinkle extra butter, brown sugar, and cinnamon on top.

5. Bake

  1. Bake at 350°F for 25–30 minutes, until golden and set.

  2. Top with the leftover cottage cheese mixture and enjoy !!

Notes

• Blended cottage cheese = soft, moist dough (no yeast needed)
• Heavy cream makes them ultra gooey + bakery-style
• Best served warm
