Belgian Waffles with Mixed Berries

Ingredients:

Waffles

• 1/2 cup gluten-free flour (or oat flour)
• 1 tsp baking powder
• Pinch of salt
• 1 egg
• 1/3 cup milk
• 1 tsp vanilla extract
• 1–2 tsp maple syrup
• 1 tsp melted butter or coconut oil

Mixed Berry Topping

• 1/2–1 cup mixed berries (strawberries, blueberries, raspberries)
• 1–2 tsp maple syrup
• Squeeze of lemon juice

Optional Toppings

• Greek yogurt
• Almond butter or peanut butter
• Chia seeds
• Coconut flakes
• Extra drizzle of maple syrup

Instructions:

  1. Heat a small pan over medium heat and add berries, maple syrup, and lemon juice.

  2. Let simmer for ~5 minutes until berries are soft and slightly syrupy.

  3. In a bowl, mix flour, baking powder, and salt.

  4. Add egg, milk, vanilla, maple syrup, and melted butter. Stir until smooth.

  5. Pour batter into a preheated waffle maker and cook until golden and crispy.

  6. Plate waffles and top with warm mixed berries.

  7. Add any extra toppings and enjoy!
