Peach & Grilled Chicken Salad
A fresh, summery kale salad with juicy peaches, grilled chicken, crunchy walnuts, and sweet cranberries, tossed in a bright lemon maple dressing inspired by Erewhon Supermarket.

Ingredients (2–3 servings)
1 bunch green kale, washed & finely chopped (~6 cups)
1–2 peaches (from The Peach Truck), sliced
1–2 grilled chicken breasts, sliced
¼ cup walnuts, roughly chopped
¼ cup dried cranberries
Lemon Maple Dressing
Juice of 1 large lemon
¼ cup olive oil
2 tsp dijon mustard
1 tbsp maple syrup
1 small garlic clove, grated (optional)
Sea salt + freshly cracked pepper
Instructions
Grill the chicken:
Season chicken with salt, pepper, and a drizzle of olive oil. Grill over medium heat for ~5–6 minutes per side until fully cooked. Let rest, then slice.Massage the kale:
Add chopped kale to a large bowl with a drizzle of olive oil and a pinch of salt. Massage for 1–2 minutes until softened.Make the dressing:
Whisk together lemon juice, olive oil, dijon, maple syrup, garlic, salt, and pepper.Assemble the salad:
Add peaches, grilled chicken, walnuts, and cranberries to the kale.Toss + serve:
Drizzle with dressing, toss well, and let sit for 5–10 minutes before serving.
