Shrimp Fajita Bowl

Ingredients

Base

• 1 cup cooked white rice
• Fresh cilantro, chopped (about 1–2 tbsp)
• Lime juice (optional, to taste)

Protein

• 6–8 oz shrimp, peeled and deveined
• 1–2 tsp Siete fajita seasoning

Veggies + Mix-ins

• 1/2 cup bell peppers, sliced (any colors)
• 1/2 cup corn
• 1/2 cup black beans (rinsed and drained)

Toppings

• 1/2 avocado, sliced
• Optional: lime wedges, extra cilantro, hot sauce

Instructions

1. Make cilantro rice

  1. Cook white rice according to package instructions.

  2. Stir in chopped cilantro and a squeeze of lime juice. Set aside.

2. Cook shrimp

  1. Toss shrimp with Siete fajita seasoning until evenly coated.

  2. Heat a skillet over medium-high heat.

  3. Cook shrimp for 1–2 minutes per side until pink and cooked through. Remove from pan.

3. Cook veggies

  1. In the same skillet, add peppers, corn, and black beans.

  2. Sauté for 5–7 minutes until slightly charred and warmed through.

4. Assemble bowl

  1. Add cilantro rice to a bowl.

  2. Top with fajita veggies and shrimp.

  3. Add sliced avocado.

  4. Finish with lime juice or hot sauce if desired.
