Ground Beef Burger Bowl

A high-protein, gluten-free burger bowl built on roasted sweet potato rounds instead of a bun. Loaded with seasoned beef, fresh toppings, and a tangy BBQ drizzle.

Ingredients

Base:

  • 1 large sweet potato, sliced into ¼-inch rounds

  • Olive oil spray

  • ½ tsp salt

  • ½ tsp paprika

Burger Layer:

  • 8 oz ground beef burger patty

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ½ tsp salt

  • ¼ tsp black pepper

  • 2–3 tbsp G Hughes BBQ sauce

Toppings:

  • 1 cup shredded lettuce

  • ½ cup cherry tomatoes, halved

  • 2 tbsp banana peppers

  • 2–3 Grillo’s Pickles pickles, sliced

  • ¼ cup grilled onions

Instructions:

1. Cook the sweet potatoes
- Preheat oven to 400°F.
- Slice sweet potato into rounds. Lightly spray with olive oil and season with salt + paprika.
- Roast for 20–25 minutes, flipping halfway, until tender and slightly crisp.

2. Cook the burger patty
- Heat a skillet or grill pan over medium-high heat.
- Season burger patty with garlic powder, onion powder, salt, and pepper.
- Cook for 3–5 minutes per side (or until desired doneness).

3. Grill the onions
- In the same pan, cook sliced onions until soft and lightly caramelized.

4. Assemble the bowl
- Add roasted sweet potato rounds as the base.
- Top with cooked beef, lettuce, tomatoes, banana peppers, and grilled onions.
- Drizzle BBQ sauce over top.
- Finish with pickles for crunch !
