Bento Box- Featuring Meditteranean Chicken Meatballs

A fresh, balanced bento box with sweet fruit, protein-packed chicken meatballs, and a bright pesto tortellini salad with kale. Perfect for busy days, beach snacks, or easy meal prep.

What You’ll Need (1 serving)

Fruit:

  • ½ cup blueberries

  • 1 kiwi, peeled & sliced

  • ½ peach, sliced

Chicken Meatballs:

Pesto Tortellini + Kale:

  • ¾ cup cooked cheese tortellini (gluten-free if needed)

  • ½ cup finely chopped kale

  • 1–2 tbsp pesto

  • 1 tbsp parmesan cheese

  • 1 tsp olive oil

  • Squeeze of lemon

  • Salt + pepper

Pesto Tortellini + Kale Directions

  1. Cook tortellini according to package directions and let cool slightly.

  2. Finely chop kale and massage it with a little olive oil + lemon juice (this makes it softer and less bitter).

  3. Toss tortellini with pesto, kale, and parmesan.

  4. Season with salt and pepper to taste.

Assemble Your Bento

  • Add blueberries, kiwi, and peach slices to two sections

  • Place chicken meatballs in another

  • Fill the last section with pesto tortellini + kale
