Banana Bread Muffins with Streusel Topping

Soft, fluffy banana bread turned into perfectly portioned muffins and topped with a buttery cinnamon streusel.

Ingredients

Wet:

  • 3 ripe bananas, mashed

  • 1/3 cup melted butter (or coconut oil)

  • 1/2 cup brown sugar (or coconut sugar)

  • 2 eggs

  • 1 tsp vanilla extract

Dry:

  • 1 ½ cups gluten-free flour (or regular flour)

  • 1 tsp baking soda

  • 1/2 tsp baking powder

  • Pinch of salt

  • 1 tsp cinnamon

Streusel Topping:

  • 1/3 cup flour

  • 1/4 cup brown sugar

  • 2 tbsp melted butter

  • 1 tsp cinnamon

Instructions:

  1. Preheat oven to 350°F and line a muffin tin with liners.

  2. In a bowl, mash bananas and mix in melted butter, sugar, eggs, and vanilla.

  3. Add dry ingredients and mix until just combined (do not overmix).

  4. Divide batter evenly into muffin cups.

  5. In a small bowl, mix streusel ingredients until crumbly, then sprinkle on top of each muffin.

  6. Bake for 18–22 minutes, or until a toothpick comes out clean.

  7. Let cool slightly before enjoying.

Notes:

These muffins are soft, moist, and have the perfect crunchy cinnamon topping, basically banana bread in muffin form, but better for on-the-go.
