Harissa Chicken Nourish Bowl

Ingredients
Chicken
• 1–2 chicken breasts
• 2–3 tbsp harissa sauce (like Mina harissa)
• Salt + pepper
Roasted Veggies
• 1 cup cauliflower
• 1 cup broccoli
• 1/2 cup chickpeas (drained + rinsed)
• 1/2 cup carrots, chopped
• Olive oil spray
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/2 tsp paprika
• Salt + pepper
Base
• 1 cup cooked quinoa
Yogurt Sauce
• 1/2 cup Greek yogurt
• Splash of lemon juice
• Pinch of salt + garlic powder
Instructions
1. Roast veggies
Preheat oven to 400°F.
Add cauliflower, broccoli, chickpeas, and carrots to a baking sheet.
Spray lightly with olive oil and season with garlic powder, onion powder, paprika, salt, and pepper.
Roast for 25–30 minutes, flipping halfway, until golden and tender.
2. Cook chicken
Coat chicken in harissa sauce and season lightly with salt and pepper.
Cook in a skillet over medium heat for 5–7 minutes per side, until fully cooked.
Slice into pieces.
3. Make yogurt sauce
Mix Greek yogurt with lemon juice and seasonings until smooth.
4. Assemble bowl
Add yogurt to the bottom of the bowl
Add quinoa above where the yogurt is placed
Top with roasted veggies and harissa chicken.
