Chipotle Inspired Taco Bowl

Ingredients:
For the turkey
● 1 lb lean ground turkey
● 1 packet taco seasoning ( I love Dalkin & Co. Gaby's Everyday, Garlic & Smoky Paprika Blend)
● ¼ cup water
For the bowls
● 1 tbsp olive oil
● 2 bell peppers, sliced (any color)
● 1 (15 oz) can black and pinto beans
● 5–6 cups mixed greens
● 1 avocado, diced
● 1 cup pico de gallo
● ¼ cup nutritional yeast
● Zack’s Mighty Nacho Tortilla Chips, for serving
Instructions
1. Heat a large skillet over medium heat. Add the ground turkey and cook until browned, breaking it into crumbles as it cooks. Drain any excess liquid if needed.
2. Stir in the taco seasoning and water. Simmer for 2–3 minutes until the turkey is evenly coated and the sauce has thickened.
3. Meanwhile, heat the olive oil in another skillet over medium heat. Add the sliced peppers and sauté for 5–7 minutes, until tender with a slight char.
4. Warm the black and pinto beans in the microwave or in a small saucepan until heated through.
5. Assemble each bowl with a bed of mixed greens. Top with the seasoned turkey, sautéed peppers, warm beans, diced avocado, and pico de gallo.
6. Sprinkle generously with nutritional yeast and serve with Zack’s Mighty Nacho Tortilla Chips for the perfect crunch.
