Lemon Blueberry Protein Muffins

Ingredients:
Muffins
• 2 eggs
• 1 ripe banana, mashed
• 2 tbsp honey
• 1 cup low-fat milk
• 3/4 cup lemon protein powder (I love Truvani and Clean Simple Eats)
• 2 tbsp Greek yogurt
• 3/4 cup gluten-free flour
• 1/2 tsp baking soda
• 1/2 tsp baking powder
• 1/2 cup fresh blueberries
Instructions:
Preheat oven to 350°F and line or spray a muffin tin.
In a bowl, whisk together eggs, mashed banana, honey, yogurt, and milk until smooth.
Add protein powder, gluten-free flour, baking soda, and baking powder. Mix until just combined.
Gently fold in blueberries.
Scoop batter evenly into 6 muffin cups and top with extra blueberries if desired.
Bake for 20–24 minutes, until tops are golden and a toothpick comes out clean.
Let cool in the tin for 5–10 minutes before removing.
Used fresh blueberries from the farmers market and makes the perfect breakfast or snack for on the go !! 🫐
