Prep Time: 10–15 minutes
Cook Time: 45 minutes
Total Time: 1 hour

Servings: 2

Ingredients:

Spaghetti Squash

  • 1 medium spaghetti squash

  • 1 tbsp olive oil

  • 1 tsp Trader Joe’s Aglio seasoning

  • ½ tsp garlic salt

  • ¼ tsp black pepper

Grilled Chicken

  • 2 boneless, skinless chicken breasts (about 8 oz each)

  • 1 tsp Trader Joe’s Aglio seasoning

  • ½ tsp garlic powder

  • ½ tsp onion powder

  • ¼ tsp black pepper

Vodka Sauce

  • 1 cup vodka sauce ( I love Botticelli )

Homemade Garlic Bread

  • 2 slices sourdough bread

  • 1 tbsp butter, softened

  • ½ tsp garlic seasoning

  • 2 tbsp grated parmesan cheese

  • 1 tbsp fresh basil, chopped

Instructions

1. Roast the spaghetti squash

Preheat oven to 400°F. Carefully cut the spaghetti squash in half lengthwise and scoop out the seeds.

Drizzle each half with olive oil and season with Trader Joe’s Aglio seasoning, garlic salt, and black pepper. Place cut-side down on a baking sheet and roast for 40 minutes, or until tender.

Let cool slightly, then use a fork to scrape the squash into spaghetti-like strands.

2. Grill the chicken

While the squash cooks, brush the chicken breasts with olive oil. Season both sides with Trader Joe’s Aglio seasoning, garlic salt, and black pepper.

Grill until cooked through and the internal temperature reaches 165°F. Let rest for 5 minutes, then slice.

3. Heat the vodka sauce

Add the vodka sauce to a small saucepan and heat over medium-low heat until warmed through.

4. Make the garlic bread

Spread each slice of bread with butter and sprinkle with garlic seasoning. Air fry at 375°F for 4–6 minutes, or until golden and crispy.

Top with parmesan cheese and fresh basil.

5. Assemble

Divide the spaghetti squash between two bowls and toss each serving with ½ cup vodka sauce. Top with sliced grilled chicken and serve with the homemade garlic bread.
