Cottage Cheese Pizza Toast

Ingredients
• 1–2 slices bread (gluten-free if needed)
• 1/2 cup Good Culture cottage cheese
• 2–4 tbsp pizza sauce ( I love Trader Joes Pizza Sauce)
• Shredded mozzarella cheese (optional but recommended)
• Garlic powder
• Italian seasoning
• Salt + pepper
• Toppings (optional): pepperoni, spinach, cherry tomatoes, red pepper flakes
Instructions
1. Toast base
Preheat oven or air fryer to 400°F.
Lightly toast bread for 2–3 minutes so it holds up to toppings.
2. Build the pizza toast
Spread marinara sauce evenly over toast.
Add a layer of Good Culture cottage cheese on top (you can leave it chunky or blend for smoother texture).
Sprinkle with mozzarella if using.
Season with garlic powder, Italian seasoning, salt, and pepper.
Add any extra toppings you like.
3. Bake
Bake at 400°F for 8–10 minutes, until edges are crispy and cheese is melted and bubbly.
Optional: broil for 1–2 minutes for extra golden top.
Top with parmesan cheese (optional)
Notes
• Good Culture is my fav cottage cheese and makes it extra rich and smooth
• You can blend the cottage cheese if you want a more “ricotta-style” texture
• Perfect quick lunch, snack, or post-class meal
