Meditteranean Chicken Bowl (Copy)

Ingredients:

Mediterranean Chicken

• 1 lb chicken breast (sliced or cubed)
• 1 tsp garlic powder
• 1 tsp onion powder
• 1 tsp oregano
• 1 tsp paprika
• 1/2 tsp cumin
• Salt + pepper
• Lemon juice (optional, for extra flavor)

Veggies + Bowl Base

• 1 cup cooked quinoa
• 1 zucchini, sliced
• 1 bell pepper, sliced
• 1/2 red onion, sliced
• 2–3 cups arugula
• Trader Joe’s Green Goddess Dressing

Instructions:

  1. Heat a nonstick pan or grill pan over medium heat (no oil needed).

  2. Season chicken with all spices, salt, and pepper.

  3. Cook chicken for 4–6 minutes per side until golden and fully cooked. Remove and set aside.

  4. In the same pan, lightly sauté zucchini, peppers, and red onion with a drizzle of olive oil until tender and slightly charred.

  5. Assemble bowl with quinoa, arugula, veggies, and chicken.

  6. Drizzle with Trader Joe’s Green Goddess dressing and finish with a squeeze of lemon if desired.
