Golden Chicken Cutlets & Caesar Salad

Ingredients:
Chicken Cutlets
• 1 lb thin-sliced chicken breast
• 1/2 cup breadcrumbs (or gluten-free breadcrumbs)
• 1/4 cup grated parmesan cheese
• 1 tsp garlic powder
• 1 tsp onion powder
• 1/2 tsp paprika
• Salt + pepper
• 1 egg
• Olive oil spray
Instructions:
Preheat oven to 400°F and line a baking sheet with parchment paper.
In one bowl, whisk the egg.
In another bowl, mix breadcrumbs, parmesan cheese, garlic powder, onion powder, paprika, salt, and pepper.
Dip each chicken cutlet into the egg, then coat evenly in the breadcrumb mixture.
Place on the baking sheet and spray the tops lightly with olive oil.
Bake for 18–22 minutes, flipping halfway through, until golden and cooked through.
Optional: broil for 1–2 minutes at the end for extra crispiness.
Sides: Paired well with homemade ceaser dressing:
Yogurt Caesar Dressing
½ cup plain Greek yogurt
1 small garlic clove, grated
Juice of ½ lemon
1 tsp dijon mustard
1–2 tsp coconut aminos
Salt + freshly cracked black pepper
Directions:
Whisk all ingredients together until smooth. Adjust to taste and thin with a splash of water if needed.
