Open-Faced Sweet Potato Beef “Bowl”

Ingredients:

Base

• 1-2 sweet potatoes
• Olive oil spray
• Salt + paprika

Beef

• 1 lb ground beef (or portion for 1–2 servings)
• Garlic powder
• Onion powder
• Salt + pepper

Toppings

• Avocado slices
• Homemade Greek yogurt ranch
• Truffle hot sauce (Melinda’s or similar)

Homemade Ranch

• 1/2–1 cup Greek yogurt
• 1 ranch seasoning packet
• Splash of water or milk (optional, to thin)

Instructions:

1. Microwave sweet potato

  1. Wash sweet potato and pierce several times with a fork.

  2. Microwave for 5–8 minutes, flipping halfway, until soft.

  3. Slice open and lightly season with salt and paprika. Spray with a little olive oil if desired.

2. Cook the beef

  1. Heat a skillet over medium-high heat.

  2. Add ground beef and season with garlic powder, onion powder, salt, and pepper.

  3. Cook until browned and fully cooked through.

3. Make ranch

  1. Mix Greek yogurt and ranch seasoning until smooth. Adjust with a splash of liquid if needed.

4. Assemble

  1. Slice open the sweet potato and gently mash slightly inside.

  2. Top with ground beef.

  3. Add shredded lettuce and avocado.

  4. Drizzle with yogurt ranch.

  5. Finish with truffle hot sauce
