The Easiest Ground Beef and Sweet Potato Bowl

Makes the perfect meal prep for the week !!

Ingredients:

Bowl Base

• 1 lb ground beef (85–90% lean)
• 1–2 sweet potatoes, diced
• 1–2 cups mushrooms, sliced
• 2 cups shredded lettuce

Seasonings

• Garlic powder
• Onion powder
• Paprika
• Salt + pepper
• Optional: Italian seasoning or chili flakes

Instructions:

1. Roast the sweet potatoes

  1. Preheat air fryer to 400°F.

  2. Dice sweet potatoes and place in microwave safe bowl. Microwave for two minutes or until soft to the touch.

  3. Spray lightly with olive oil and season with salt, pepper, and paprika.

  4. Bake for 10-12 minutes, flipping halfway, until soft and slightly crispy.

2. Cook the beef

  1. Heat a skillet over medium-high heat.

  2. Add ground beef and season with garlic powder, onion powder, salt, and pepper.

  3. Cook until browned and fully cooked through, breaking it apart as it cooks.

3. Sauté mushrooms

  1. In the same pan (or a separate one), cook mushrooms until softened and slightly golden.

  2. Season lightly with salt and pepper.

4. Assemble the bowl

  1. Add shredded lettuce to the base of your bowl.

  2. Top with roasted sweet potatoes, ground beef, and mushrooms.

  3. Mix everything together and enjoy warm.
