Teriyaki Ground Beef Lettuce Wraps

Ingredients:

Beef Filling

• 1 lb ground beef (85–90% lean)
• 1–2 tsp garlic powder
• 1 tsp ginger (fresh or ground)
• Salt + pepper
• 1/2 cup shredded carrots
• 1–2 tbsp sesame seeds

Teriyaki Sauce

• 1/3 cup soy sauce or coconut aminos
• 2–3 tbsp honey or maple syrup
• 1 tbsp rice vinegar
• 1 tsp garlic powder or minced garlic
• 1 tsp ginger

Slurry (to thicken)

• 1 tbsp cornstarch
• 2 tbsp water

To Serve

• Butter lettuce or romaine leaves
• Avocado slices
• Extra sesame seeds

Instructions:

1. Cook the beef

  1. Heat a skillet over medium-high heat.

  2. Add ground beef and cook until browned, breaking it apart as it cooks.

  3. Drain excess fat if needed.

2. Build the sauce

  1. In a small bowl, mix soy sauce, honey, vinegar, garlic, and ginger.

  2. Stir cornstarch + water together in a separate bowl to make a slurry.

3. Thicken + combine

  1. Pour the teriyaki sauce into the skillet with the beef.

  2. Stir and let it simmer for 1–2 minutes.

  3. Slowly add the slurry while stirring continuously.

  4. Cook for another 1–2 minutes until the sauce thickens and coats the beef.

4. Finish

  1. Stir in shredded carrots and sesame seeds.

  2. Remove from heat.

5. Assemble

  1. Spoon beef mixture into lettuce leaves.

  2. Top with avocado slices and extra sesame seeds.

  3. Serve immediately.
