Air-Fryer Coconut Shrimp Bowl

A tropical-inspired bowl with crunchy shrimp, fresh veggies, and simple flavors

Ingredients

Coconut Shrimp

• 6–8 oz shrimp, peeled and deveined
• 1 egg, whisked
• 3/4 cup coconut flakes (unsweetened)
• 1/2 tsp garlic powder
• 1/2 tsp salt
• Optional: pinch paprika

Base

• 1 cup cooked white rice

Cucumber Carrot Salad

• 1/2 cup cucumber, thinly sliced
• 1/2 cup shredded carrots
• 1 tbsp rice vinegar
• Pinch of salt

Side Salad

• Mixed greens
• Olive oil + lemon or balsamic

Instructions

1. Prep shrimp

  1. Pat shrimp dry and season with garlic powder and salt.

2. Coat shrimp

  1. Dip shrimp into whisked egg.

  2. Coat in coconut flakes, pressing so they stick.

3. Air fry

  1. Preheat air fryer to 400°F.

  2. Lightly spray shrimp with oil.

  3. Air fry for 8–10 minutes, flipping halfway, until golden and crispy.

4. Make cucumber carrot salad

  1. Toss cucumber and carrots with rice vinegar and salt.

  2. Let sit for a few minutes.

5. Assemble

  1. Add rice to a bowl.

  2. Top with coconut shrimp.

  3. Add cucumber carrot salad and greens.

  4. Drizzle greens with olive oil + lemon or balsamic.
