Pinapple Shrimp Summer Bowl

My favorite summer dinner and all of these ingredients pair so well with the pinapple creating the ultimate dinner bowl.

Ingredients

Base

• 1 whole pineapple (cut in half + hollowed, about 1–1.5 cups chunks reserved)
• 2 cups zucchini noodles

Protein

• 6–8 oz shrimp, peeled and deveined
• 1/3 cup orange marinade (like Primal Kitchen)

Veggies

• 1 cup mushrooms, sliced
• 1 cup broccoli florets
• 1–1.5 cups pineapple chunks (from the pineapple)
• 1/2 tsp garlic powder
• 1/2 tsp onion powder
• 1/4 tsp salt
• 1/4 tsp black pepper

Toppings

• 1/2 cup pico de gallo

Instructions

1. Prep pineapple bowl

  1. Slice pineapple in half lengthwise.

  2. Carefully hollow out the center and set aside about 1–1.5 cups of chunks.

2. Marinate shrimp

  1. Toss shrimp with 1/3 cup orange marinade.

  2. Let sit for 10–15 minutes.

3. Cook shrimp

  1. Heat a skillet over medium-high heat.

  2. Cook shrimp for 1–2 minutes per side until pink and cooked through. Remove from pan.

4. Cook veggies

  1. In the same pan, add mushrooms, broccoli, zucchini noodles, and pineapple chunks.

  2. Season with garlic powder, onion powder, salt, and pepper.

  3. Cook for 5–7 minutes until tender.

5. Assemble

  1. Fill hollowed pineapple with veggie mixture.

  2. Top with shrimp.

  3. Add pico de gallo on top.
