Banana Bread Muffins with Streusel Topping
Soft, fluffy banana bread turned into perfectly portioned muffins and topped with a buttery cinnamon streusel.

Ingredients
Wet:
3 ripe bananas, mashed
1/3 cup melted butter (or coconut oil)
1/2 cup brown sugar (or coconut sugar)
2 eggs
1 tsp vanilla extract
Dry:
1 ½ cups gluten-free flour (or regular flour)
1 tsp baking soda
1/2 tsp baking powder
Pinch of salt
1 tsp cinnamon
Streusel Topping:
1/3 cup flour
1/4 cup brown sugar
2 tbsp melted butter
1 tsp cinnamon
Instructions:
Preheat oven to 350°F and line a muffin tin with liners.
In a bowl, mash bananas and mix in melted butter, sugar, eggs, and vanilla.
Add dry ingredients and mix until just combined (do not overmix).
Divide batter evenly into muffin cups.
In a small bowl, mix streusel ingredients until crumbly, then sprinkle on top of each muffin.
Bake for 18–22 minutes, or until a toothpick comes out clean.
Let cool slightly before enjoying.
Notes:
These muffins are soft, moist, and have the perfect crunchy cinnamon topping, basically banana bread in muffin form, but better for on-the-go.
