Classic Banana Bread

Ingredients

• 3 very ripe bananas (mashed)
• 2 eggs
• 1/4 cup coconut sugar
• 2 tbsp maple syrup or honey
• 1 tsp vanilla extract
• 1/4 cup milk
• 1 1/2 cups gluten-free 1:1 flour
• 1 tsp baking soda
• 1/2 tsp cinnamon
• Pinch of salt

Topping

• 1 ripe banana, sliced lengthwise

Instructions

1. Prep batter

  1. Preheat oven to 350°F and line a loaf pan.

  2. Mash bananas in a bowl.

  3. Whisk in eggs, coconut sugar, maple syrup, vanilla, and milk until smooth.

2. Add dry ingredients

  1. Add flour, baking soda, cinnamon, and salt.

  2. Mix until just combined (don’t overmix).

3. Add topping

  1. Pour batter into loaf pan.

  2. Place banana slices on top, cut side up.

4. Bake

  1. Bake for 45–55 minutes, until golden and a toothpick comes out clean.

  2. Let cool before slicing.

Notes
• Super ripe bananas make it extra moist
• Optional: add chocolate chips or walnuts
