Copycat Erewon White Bean Kale Salad
A signature-style kale salad inspired by the iconic Erewhon Supermarket, featuring finely chopped kale, creamy white beans, crunchy super seeds, and a bright lemon maple dressing.

Ingredients
1 bunch green kale, washed & finely chopped (~6 cups)
1 can white beans, drained & rinsed
1 large avocado, diced (optional)
Super Seed Mix:
1 tbsp pumpkin seeds
1 tbsp hemp seeds
1 tbsp sunflower seeds
Lemon Maple Dressing
Juice of 1 large lemon
¼ cup olive oil (Graza Olive Oil is my favorite oil to use !!)
2 tsp dijon mustard
1 tbsp maple syrup
1 small garlic clove, grated (optional)
1 tablespoon of parmesan cheese
Sea salt + freshly cracked pepper
Instructions
Massage the kale: Add chopped kale to a large bowl with a pinch of salt and a drizzle of olive oil. Massage for 1–2 minutes until softened.
Make the dressing: Whisk together lemon juice, olive oil, dijon, maple syrup, garlic, salt, and pepper.
Assemble: Add white beans and seeds to the kale. Pour dressing over and toss well.
Finish: Gently fold in avocado if using and top with parmesan cheese
Let sit for 10–15 minutes before serving for the best flavor.
Keeps well in the fridge for up to 3 days
