Bento Box- Featuring Meditteranean Chicken Meatballs
A fresh, balanced bento box with sweet fruit, protein-packed chicken meatballs, and a bright pesto tortellini salad with kale. Perfect for busy days, beach snacks, or easy meal prep.
What You’ll Need (1 serving)
Fruit:
½ cup blueberries
1 kiwi, peeled & sliced
½ peach, sliced
Chicken Meatballs:
4–5 chicken meatballs (store-bought or homemade) Chicken Meatball Recipe
Pesto Tortellini + Kale:
¾ cup cooked cheese tortellini (gluten-free if needed)
½ cup finely chopped kale
1–2 tbsp pesto
1 tbsp parmesan cheese
1 tsp olive oil
Squeeze of lemon
Salt + pepper
Pesto Tortellini + Kale Directions
Cook tortellini according to package directions and let cool slightly.
Finely chop kale and massage it with a little olive oil + lemon juice (this makes it softer and less bitter).
Toss tortellini with pesto, kale, and parmesan.
Season with salt and pepper to taste.
Assemble Your Bento
Add blueberries, kiwi, and peach slices to two sections
Place chicken meatballs in another
Fill the last section with pesto tortellini + kale
