Fresh Lemon Dill Hummus
The kind of dip that disappears before dinner. Fresh lemon, lots of dill, and a platter of crunchy vegetables for scooping.

Ingredients:
1 (15 oz) can chickpeas, drained and rinsed
¼ cup tahini
2 tbsp fresh lemon juice
Zest of 1 lemon
2 tbsp fresh dill, finely chopped
1 garlic clove
2 tbsp olive oil
2–4 tbsp ice water
½ tsp kosher salt
Freshly ground black pepper, to taste
Instructions:
Add chickpeas, tahini, lemon juice, lemon zest, garlic, salt, and olive oil to a food processor.
Blend for 1 minute.
With the processor running, slowly add ice water until smooth and creamy.
Add fresh dill and pulse a few times to combine.
Taste and adjust lemon, salt, or dill as needed.
