Fresh Lemon Dill Hummus

The kind of dip that disappears before dinner. Fresh lemon, lots of dill, and a platter of crunchy vegetables for scooping.

Total Time: 15 minutes

Servings: 4–6

Ingredients:

  • 1 (15 oz) can chickpeas, drained and rinsed

  • ¼ cup tahini

  • 2 tbsp fresh lemon juice

  • Zest of 1 lemon

  • 2 tbsp fresh dill, finely chopped

  • 1 garlic clove

  • 2 tbsp olive oil

  • 2–4 tbsp ice water

  • ½ tsp kosher salt

  • Freshly ground black pepper, to taste

Instructions:

  1. Add chickpeas, tahini, lemon juice, lemon zest, garlic, salt, and olive oil to a food processor.

  2. Blend for 1 minute.

  3. With the processor running, slowly add ice water until smooth and creamy.

  4. Add fresh dill and pulse a few times to combine.

  5. Taste and adjust lemon, salt, or dill as needed.

Serving Suggestions:

For a summer appetizer board:

  • Lemon dill hummus in the center

  • Cucumber slices

  • Peppers

  • Carrot chips

  • Gluten-free crackers

  • Warm pita or pita chips
